Walnut-based recipes

  
  • Moist walnut cake

Ingredients:      - 250 g of walnut kernels roughly chopped
                             - 250 g of sugar
                             - 50 g of flour
                             - 6 eggs
                             - A small glass of cognac or rum
  
  • Mix the kernels with the sugar and the flour.
  • Separate the egg whites from the yolks and incorporate the yolks into the ready mixture
  • Flavour with the alcohol
  • Add carefully the stiffly beaten egg whites.
  • Pour into a buttered cake tin and bake at medium heat (170° C) during one hour.
  • Turn the cake out, let it cool down and garnish it at will with walnut kernels and Chantilly cream.

  
  • Walnut-based aperitif

Ingredients:      - 40 green walnuts
                             - 4 litres of red wine
                             - 1 kg of sugar
                             - 1 litre of brandy
                             - 1 vanilla pod
  
  • Gather the walnuts around June the 21st.
  • Wash them and dry them with absorbent paper, put all ingredients in a demijohn
  • Let the mixture macerate for 40 days minimum
  • Filter it and pour it into bottles.
